
From now on, we are expanding our offerings at the Food Campus to include fresh freshwater fish from Fischerei Schliersee. Char, trout, and pike-perch come from regional breeding in clear springwater ponds in the Leitzach Valley and are produced with a lot of experience and artisanal know-how. The fish grow up under natural conditions and are processed fresh daily – for genuine taste and high-quality nutrients.
With this collaboration, we are deliberately focusing on short supply chains, transparent origins, and regional partnerships. The fish do not carry MSC or ASC certification, as our focus here is specifically on regionality and direct origin. Depending on availability, there will regularly be suitable fish dishes in our restaurants in the future – for more variety and regional quality on the plate.
